Chipotle & Lime Cashew “Cream Cheese”


As you may have read in my little bio, I have been dealing with adult acne for a while now. Honestly it has been really difficult as it’s required a lot of dietary changes to heal it. Although it isn’t just gone, I have to still work to control it.

On the upside, things like this can have a silver lining. If it weren’t for dealing with this I would have never realized how important my overall health is and how dependent health is on what you feed yourself and what you put on your skin.

One thing I gave up 99% was dairy. I say 99% because it’s verrry hard to be perfect. I occasionally will indulge in some raw organic dairy. Meanwhile, you truly don’t have to feel too sad about giving up dairy :)… and yes, it’s totally cool if you do a happy dance right now… BECAUSE, there are some super similar alternatives out there, my favorites being homemade alternatives. YIPPEE SKIPPY WOOHOO!!!

This recipe comes so extremely close to a flavored cream cheese, I personally can’t tell a difference. Now there may be some purists out there who will know, but they will still think this is one darn tasty concoction! It is incredible as a spread on raw flax crackers or on a sandwich or whatever else you would normally use a spicy cream cheese with.

BONUS… below this recipe I am throwing in a second way to make this Cashew “Cream Cheese.”

Ingredients:

 

  • 16oz. bag of raw organic cashews
  • Juice of 1 organic lime
  • 1/2 tsp. (or more if you like it more salty) natural salt (sea salt, Himalayan etc.)
  • 4 probiotic capsules emptied, toss capsule
  • 1/2 tsp. cumin powder
  • 1.5 tsp. (or more if you like it extra spicy) chipotle chili powder

Instructions:

You will need to pre-soak your cashews in filtered water for 2-4 hours. Once you have done that, strain the water from the cashews, but don’t toss it as you may need a little to assist you when you blend the cashews.

Add the cashews and the rest of the ingredients to your blender and blend until you have a nice thick and creamy consistency. Again if your blender is having trouble, simply add a little of the soak water until everything is blending smoothly.

After you are done blending your ingredients, pour your mixture into a piece of cheesecloth and suspend in a large bowl so that the liquid can drain out. You do not want the bottom of the cheesecloth to touch the bowl, or to be sitting in the bowl.

It must be suspended above the bowl. Allow this to sit on your counter for 24 hours. Finally, toss all liquid that has drained out and put your cheese mixture into a container and refrigerate. I only will keep this for 5 days, so you may want to halve the recipe if you don’t think you can eat it so quickly.

STRAWBERRY CASHEW “CREAM CHEESE”

Ingredients:

  • 16oz. bag raw organic cashews
  • 8oz. bag freeze dried organic strawberries
  • 2 tbsp. organic coconut sugar
  • 4 probiotic capsules emptied, toss capsule
  • 1/2 tsp. pure vanilla extract
