Chocolate Allergen-free Cupcakes


Trying to find an allergen-free cake recipe that will pass the test of preschoolers?  This one will do it.  It is full of healthy ingredients and can be made sugar-free.  It is easy to make into cupcakes or various cake styles and freezes well.

Ingredients:

  • 1 cup gluten-free all-purpose flour (Bob’s Red Mill has one without rice)
  • 1/2 cup sweet potato flour
  • 1/4 cup coconut syrup
  • 1 cup coconut crystal sugar
  • 5 tbsp powdered cocoa
  • 1 tbsp chia seeds
  • 1/4 tsp vanilla powder (can use 1 tsp vanilla extract)
  • 1/2 tsp salt
  • 1 1/2 tsp gluten-free baking soda
  • 4 oz unsweetened applesauce
  • 6 tbsp melted coconut oil (first pressing)
  • 2 tbsp apple cider vinegar
  • 1 cup water
  • Decorations (optional) -  Enjoy Life chocolate chunks; Surf Sweets Organic jelly beans

Instructions:

  1. Preheat oven to 325 degrees F (175 degrees C)
  2. oil pans or tins with coconut oil
  3. Sift flour, mix all dry ingredients well
  4. pour liquid ingredients (except apple cider vinegar) into dry mixture, mix until well blended
  5. add apple cider vinegar, mix until well blended (should notice bubbling beginning, this batter does not store well, bake immediately)
  6. pour into cupcake cups, muffin tins, or cake pans
  7. bake cupcakes about 15 minutes; 8″ round cake pans about 22 minutes…toothpick or cake tester should come out clean

I love the versatility of this recipe.  You can add so many ingredients to make it work best for you (ie: a little chopped spinach, chopped carrots, etc.).  It tastes great fresh from the oven.  It is best stored in a cool place and will not last in a warm environment more than a few days.  This recipe is a definite turn from traditional processed cakes to a healthier, fun option.

Nutritional Benefits:

There are great nutrients in these ingredients to nourish the body and provide stamina.   The coconut sugar is low glycemic so it doesn’t cause sharp blood sugar spikes but gives a nice sweet flavor (great for kids).  The chia seeds are like a meal in themselves with fiber, protein, calcium, and Omega-3.  Chia seeds are great in allergen-free cooking because they create a gel when wet and help hold the product together. (I think I’m addicted to baking with chia seeds.) (1)

Coconut oil is another healthy benefit with its plant based saturated fat that is full of medium chain fatty acids.  This is a “good” fat and MCFA’s can do great things for our health (links below to share coconut oil benefits, there are so many).  The Enjoy Life chocolate chunks and the Organic Surf Sweets jelly beans are allergen-free but they do contain cane sugar.
