Coconut Cream Fruit Salad


A lovely, lightweight and cool retreat with sweet coconut cream and fruit.  If you have a tart bunch of grapes, this a quick way to tame the tart and watch the grapes vanish.

Ingredients:

  • 15 ounce can of coconut milk
  • 2 tbsp. Lakanto Gold
  • 1/8 tsp ground cinnamon
  • 2 cups your choice of fruit(s)

Instructions:

  1. open canned coconut milk, place in refrigerator for at least one hour
  2. remove canned coconut milk from refrigerator and remove the harder cream from the top of the can (about the tip 1/3 to 1/2 of can) and place in a bowl, what is left in the bottom of the can is more watery (can use the watery portion for a different recipe)
  3. add the Lakanto Gold and the cinnamon to the coconut cream in the bowl, mix well
  4. cut fruit if necessary into small chunks – about the size of medium to large blueberries
  5. mix fruit into coconut cream mixture
  6. chill for at least 30 minutes (the longer it chills, the more set the coconut cream becomes)

My choice of ingredients are Native Forest canned coconut milk because their cans are BPA and BSA free.  I know other brands are BPA free but I have not contacted them to check their testing for BSA.  Lakanto Gold…have you tried this, yet?  I love to open the bag and just smell it…such a wonderful product.  I’ve included a link below to share more about this “zero” sweetener.  This recipe is a quick, nutritious, and a pretty addition to any spring or summer spread.  You can crush a few Chlorella tablets to dye it green for a festive celebration, too.

Nutritional Benefits: This is a simple, allergen-free recipe with all the benefits of coconut oil/milk, no sugar worries with Lakanto, some cinnamon to aide in so many ways and the great fiber and vitamins of fresh fruit.  I have links below to share the health benefits of these ingredients since there are so many!
