Cherry Ice Cream with Chocolate Drizzle


Chocolate and cherries go so well together AND this raw vegan homemade ice cream is actually good for you! You’ll be making it regularly while cherries are in season! It’s perfect if you are in a decadent mood OR you can omit the chocolate if you are wanting something more fruity and light.

I always have homemade almond milk around so it’s a breeze to make a raw vegan ice cream when the craving arises! This yummy treat is perfect to share with family and friends, even if they don’t share your passion for health.

Ice Cream Ingredients:

  • *2 cups sweetened raw almond milk, frozen in standard ice cube tray
  • 1/2 cup fresh cherries, seeds removed and chopped
  • 1/2 tsp vanilla extract (or 1 tsp vanilla powder or inside of 1 – 2 vanilla beans)
  • favorite raw sweetener for extra sweetness (optional) – coconut sugar, coconut nectar, honey, dates…

Chocolate Drizzle Ingredients:

  • 1 tbsp raw coconut nectar or honey
  • 1 tsp raw cacao powder
  • super tiny sprinkle of salt

*Almond Milk: If you don’t already make your own almond milk, here’s what I use to make a big batch. Blend for 1 minute and strain through nut milk bag.

  • 2 cups raw almonds, soaked for 24 hours and rinsed (about 2½ cups after soaking)
  • 6 large dates, pitted
  • 5 1/2 cups water

Instructions:

  1. Freeze 2 cups almond milk in a standard ice cube tray until solid. **skip to step 3 & then step 6 for ice cream maker instructions.
  2. Put 2 ice cream bowls and ice cream scoop in the freezer to chill so that ice cream doesn’t melt as fast.
  3. Stir together chocolate drizzle ingredients and set to the side.
  4. Put almond milk cubes and vanilla into vitamix with any additional sweetener if you choose. Use tamper to mash down while blending on high, until it reaches a thick ice-cream consistency. Don’t over blend.
  5. Add all but 1 tbsp of the cherries to the blender and blend again with tamper for a few seconds. I like it when there are still some cherry chunks in there and some of the ice cream turns pink and some is still white, making a very pretty swirl design!
  6. ** If you prefer to make this in an ice cream maker, simply add all ice cream ingredients, except 1 tbsp cherries, into ice cream maker and let it run. If your additional sweetener is dates, blend extra dates into almond milk prior to adding to ice cream maker. You might want to double this recipe  since most ice cream makers generally do better with at least a quart of mixture.
  7. Scoop into bowls, top with drizzle and remaining cherries.
  8. Enjoy!

You can tell by the deep red color of cherries that they are wonderful for blood building and full of antioxidants. Studies are also finding that cherries can be helpful in combating cancer. Cherries contain melatonin, which can help us get better sleep. (1)

Almonds, like most raw nuts, are a wonderful source of plant-based protein and fiber! They supply a hefty dose of vitamin E and many minerals and vitamins such as copper phosphorus, magnesium and B vitamins! (2)

Cacao. Well, the list of benefits of this superfood is never-ending. Some of the main perks of eating raw cacao include a full dose of magnesium which can help with slow elimination, among other things. While it’s aphrodisiac and mood-enhancing effects may be it’s most notable appeal, it’s also full of minerals and is very powerful for heart health.
