Raw Vegan Jalapeño Garlic Flatbread
 

This recipe is very versatile and tasty! Garlic and jalapeño – who doesn’t love that combo?!!! You can use this flatbread for raw sandwiches, enjoy it with your favorite spreads (avocado, hummus…), spread it into thin circles and use it as a raw wrap, crumble it up and add it to a salad or to garnish a soup. Oh, the list goes on, and I’m sure you will find yummy ways to eat it!

Ingredients:

  • 1 1/3 cups sunflower seeds, soaked 6 hours
  • 1 tsp salt
  • 3 garlic cloves, peeled
  • 1/2 cup onion, chopped
  • 3/4 cup flax seeds, ground (yields about 1 cup)
  • 2 tbsp water
  • 1 cup celery, chopped
  • 1/2 cup carrot, chopped
  • 1 jalapeño pepper, sliced thin, seeds set aside

Instructions:

  1. Soak sunflower seeds in water for 6 hours. Rinse and strain.
  2. Grind flax seeds into a powder (I use clean coffee grinder or vitamix).
  3. In food processor, process all ingredients, except flax and *jalapeño, until well broken down. If you intend to make into thin wraps, process longer to get a smoother “dough”.  *I prefer to add decorative jalapeño slices and seeds at the end, but you can add here if you prefer it incorporated into the mixture.
  4. Add flax and process again. The mixture will become sticky, like a wet dough.
  5. On a dehydrator tray with parallax sheet, spread mixture out evenly. I use an small offset spatula for this.
  6. For sandwich bread, score two lines going up and down and two lines going left to right, making 9 equal squares. You can skip the scoring step and cut with knife to scissors later, if you are undecided how you would like to use your bread.
  7. Press jalapeño slices into dough and sprinkle on jalapeño seeds.
  8. Dehydrate on 115 degrees for 4 hours.
  9. Flip bread over on tray and gently remove parallax sheet.
  10. Dehydrate on 115 degrees for another 2 – 4 hours.
  11. Use within a week. This bread is still slightly moist and will not last as long as a fully dehydrated cracker.

Sunflower seeds are loaded with vitamin E, which is anti-inflammatory, amazing for heart health, and has even been known to reduce diabetes complications. These seeds can also lower bad cholesterol and lower the risk of developing atherosclerosis. Magnesium is another perk to eating sunflower seeds because it positively effects asthma, muscle health, blood pressure and the nervous system! (1)

Garlic is popular for it’s positive effects on the heart and circulatory system. Some also utilize garlic in the prevention of several cancers. Historically, garlic has been used to treat parasites, digestive issues, liver problems and even fevers. Garlic is also a very strong antibiotic. (2)

Jalapeños get their spicy flavor from capsaicin, which provides analgesic and anti-bacterial properties. Vitamin C, vitamin E and vitamin K, vitamin A and beta carotene are all present in jalapeños. The antioxidants make it a valuable anti-inflammatory food. (3)
