KOHLRABI FRITTERS
Ingredients:

1 medium Kohlrabi (vegetable member of cabbage family) (shredded)

1 medium zucchini(shredded)
-
1 1/4 cup garbanzo bean (chickpea) flour
-
3 garlic cloves, sautéed
-
1 tbsp olive oil + 1/4 cup of olive oil for skillet
-
1/2 tsp coriander, ground
-
1/4 tsp cumin
-
1/2 tsp onion powder
-
1/4/tsp turmeric
-
1/2 tsp cayenne pepper
-
1/2 tsp salt
-
1 tbsp tapioca flour with 2 tbsp water or 1 egg
-
water to thin
Instructions:

Shred vegetables and place in separate bowl.

Sauté garlic in skillet with olive oil.

Mix dry ingredients.

Add sautéed garlic to dry ingredients.

Mix tapioca flour with water and add to dry ingredients or add egg to dry ingredients.

Add water to reach pancake batter consistency.
-
Fold in vegetables.
-
Place spoonful’s of batter in hot oil, flip only once.
